Chicken, mushroom and leek pie with a puff pastry lid and creamy filling. Includes leek cleaning, sauce thickness and advice for keeping pastry crisp.
This pie has a puff pastry lid and no bottom crust. Cooking the filling first lets you check the chicken and adjust the sauce before the pastry covers it. Let the filling cool briefly before adding the lid: hot steam can soften the pastry fat and make the top less crisp.

Equipment
A large frying pan, a board and knife, a roughly 20 × 25 cm baking dish, pastry brush and food thermometer.
Ingredients
- 500 g boneless skinless chicken thighs, cut into 2 cm pieces
- 2 tablespoons olive oil, divided
- 250 g mushrooms, sliced
- 2 medium leeks, trimmed and sliced, about 250 g prepared
- 2 garlic cloves, finely chopped
- 30 g butter
- 30 g plain flour
- 350 ml chicken stock
- 100 ml milk
- 1 teaspoon Dijon mustard
- 1 teaspoon dried thyme
- 1/2 teaspoon fine salt, plus more to taste
- 1/4 teaspoon black pepper
- 1 sheet ready-rolled puff pastry, about 320 g, thawed if frozen
- 1 egg, beaten, for brushing
Instructions
- Clean and prepare. Heat the oven to 200°C/180°C fan/400°F. Rinse sliced leeks in a bowl of water, swishing to release grit, then lift them out and drain well. Keep the pastry chilled while preparing the filling. Check the pastry packet in case its oven temperature differs.
- Cook the chicken. Heat 1 tablespoon oil in a large frying pan over medium-high heat. Add chicken in a single layer, working in batches if necessary. Cook for about 7–9 minutes, turning until browned and cooked through. Check several thick pieces for 74°C/165°F. Transfer cooked chicken to a clean bowl.
- Brown the vegetables. Add remaining oil and mushrooms to the pan. Cook for 5–6 minutes until the released liquid evaporates. Add leeks and butter and cook over medium heat for 6–8 minutes until soft. Stir in garlic and thyme for 30 seconds. Sprinkle with flour and stir for 1 minute.
- Finish and cool the filling. Gradually stir in stock, followed by milk and mustard. Simmer for 4–5 minutes until the sauce coats a spoon. Return chicken and any juices, add salt and pepper, then taste. Transfer to the baking dish and allow to stop steaming, about 10–15 minutes. Do not leave it standing for hours.
- Add a pastry lid and bake. Lay pastry over the filling, trim excess and press it lightly to the dish rim. Cut a small central steam slit. Brush the top with beaten egg. Bake for 25–30 minutes until deeply golden and puffed, checking that the filling reaches 74°C/165°F. If the top darkens too fast, cover loosely with foil. Rest for 5 minutes before serving.
Cooking notes and substitutions
Getting the sauce right
The sauce should be slightly thicker than a pouring cream sauce because the vegetables may release more moisture during baking. If it is runny, simmer a little longer before assembling. If very thick, add stock a tablespoon at a time.
Pastry handling
Keep puff pastry cold and avoid stretching it tightly over the dish, as it contracts in the oven. A steam slit helps moisture escape. Follow thawing directions for frozen pastry; bending a partly frozen sheet can crack it.
Storage
For make-ahead preparation, cool and refrigerate the filling promptly within 2 hours, then add fresh pastry before baking the following day. Refrigerate cooked leftovers for up to 3 days and reheat until 74°C/165°F. Cover loosely to limit browning; the pastry will lose some crispness.
Allergens and food safety
Contains wheat, milk, egg and mustard. Stock may contain celery; pastry ingredients vary, so check labels. Keep refrigerated food at 4°C/40°F or below. Use clean utensils when checking cooked food.
