Build sweet potato and black bean bowls with corn, crunchy cabbage and lime yogurt. Includes roasting, meal-prep and substitution tips.

These bowls bring together sweet roasted potato, warm black beans and corn, crunchy cabbage and a cool lime-yogurt dressing. Cooking the hot and cold components separately keeps the textures distinct. The beans supply enough substance that rice is optional rather than necessary, and the toppings can be adjusted at the table.

Serves: 4 servings. Estimated prep: 20 minutes. Estimated cooking: 30 minutes. Timings are estimates; use the texture and doneness checks below.

Equipment: A large rimmed baking tray, small saucepan, two mixing bowls and a sharp knife.

Ingredients

  • 800 g sweet potatoes, peeled and cut into 2 cm cubes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin, divided
  • 2 cans (400 g each) black beans, drained and rinsed, about 480 g drained total
  • 150 g frozen sweetcorn
  • 100 ml water
  • 200 g red cabbage, finely shredded
  • 1 ripe avocado, diced just before serving
  • 150 g plain yogurt
  • 2 tablespoons lime juice, divided, plus wedges to serve
  • 1/2 teaspoon fine salt, divided, then adjust to taste
  • 2 tablespoons chopped coriander, optional

Instructions

  1. Season the potatoes. Heat the oven to 220°C/425°F (200°C fan). Toss the sweet potato cubes with the oil, smoked paprika, half the cumin and half the salt. Spread in a single layer on a large tray.
  2. Roast until tender. Roast for 25–30 minutes, turning after about 15 minutes. Check the centre of a larger cube with a fork: it should be soft, with browned edges outside. Give crowded pieces more space or use two trays.
  3. Warm the beans and corn. Put the drained beans, frozen corn, water and remaining cumin in a saucepan. Bring to a gentle simmer and cook for 5–8 minutes, stirring, until the corn is cooked and everything is hot throughout. Drain any excess water rather than making the bowls soupy.
  4. Dress the cabbage. Toss the shredded cabbage with 1 tablespoon lime juice and the remaining salt. Massage briefly with clean hands or toss firmly with tongs, then leave for 5 minutes to soften slightly while keeping some crunch.
  5. Mix the yogurt sauce. Stir the yogurt with the remaining tablespoon lime juice. Thin with water a teaspoon at a time until it can be drizzled. Taste before adding more salt. Dice the avocado at the last minute.
  6. Build the bowls. Divide the warm sweet potato and bean mixture among four bowls. Add cabbage and avocado, then spoon over the yogurt dressing. Finish with coriander if using and offer lime wedges alongside.

Cut evenly for predictable roasting

Large sweet potato pieces stay firm in the middle while very small ones can burn. Aim for roughly 2 cm cubes and turn them only after the undersides have begun to colour. Dark metal trays brown faster than glass dishes, so check earlier if the edges darken quickly.

Pack the components separately

For meal prep, keep the roasted potatoes and bean mixture in one container, the cabbage in another and the dressing in a small sealed pot. Add avocado after reheating so it stays fresh. Keeping wet dressing away from the potatoes helps their surface stay less soggy.

Swap with care

Use a plain unsweetened dairy-free yogurt if needed. Kidney or pinto beans work if they are canned and fully cooked. A small amount of cooked rice can stretch portions, but cool and refrigerate it promptly. Use parsley instead of coriander if you prefer its flavour.

Storage and reheating

Refrigerate leftovers promptly in shallow covered containers, within 2 hours or within 1 hour above 32°C/90°F. Keep at 4°C/40°F or colder and use within 3–4 days. Reheat to 74°C/165°F throughout. Add a small splash of water to rice, pasta or stew as needed and stir so it heats evenly.

Allergen notes

Contains milk in the yogurt. Check dairy-free alternatives and spice labels for allergens.
