A mushroom and lentil pie with savoury vegetable gravy and a golden mashed-potato topping. Includes advice for a thick filling and crisp potato ridges.
This vegetable version of a shepherd-style pie puts browned mushrooms and cooked lentils under a ridged potato topping. A thick filling is important: it supports the mash and makes the pie easier to serve. Use canned or previously cooked lentils, rather than adding dry lentils to the gravy.

Equipment
A large saucepan, a colander, a potato masher, a wide frying pan and a roughly 20 × 25 cm ovenproof dish.
Ingredients
- 900 g floury potatoes, peeled and cut into similar-sized chunks
- 40 g butter, divided
- 80 ml milk, warmed
- 2 tablespoons olive oil
- 400 g mushrooms, finely chopped
- 1 onion, finely chopped
- 2 carrots, cut into small dice
- 2 garlic cloves, finely chopped
- 2 tablespoons tomato purée
- 1 tablespoon plain flour
- 400 ml vegetable stock
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 2 × 400 g cans brown or green lentils, drained and rinsed, about 480 g drained
- 100 g frozen peas
- 1/2 teaspoon fine salt, plus more to taste
- 1/4 teaspoon black pepper
Instructions
- Cook and mash the potatoes. Heat the oven to 200°C/180°C fan/400°F. Put potatoes in a pan of cold water, bring to a simmer and cook for 15–20 minutes until a knife enters easily. Drain thoroughly, let steam escape for 2 minutes, then mash with 30 g butter, warm milk and some of the salt. Keep the mash fairly firm.
- Brown the mushrooms. Meanwhile, heat the oil in the wide frying pan over medium-high heat. Cook mushrooms in two batches for about 5 minutes each, stirring occasionally, until their moisture evaporates and they begin to brown. Transfer to a bowl. Crowding all the mushrooms into a small pan gives a paler, wetter filling.
- Build the vegetable gravy. Lower the heat to medium. Add onion and carrots to the same pan with the remaining 10 g butter. Cook for 8–10 minutes until softened, adding a small splash of water if needed. Stir in garlic, tomato purée and thyme for 1 minute. Sprinkle over flour and stir for another minute.
- Thicken before assembling. Gradually stir in stock and soy sauce. Add lentils, browned mushrooms, peas, pepper and remaining measured salt. Simmer for 8–10 minutes, stirring, until the mixture is thick enough for a spoon to leave a short trail. Taste and adjust. Transfer to the baking dish and let it stand for 5 minutes.
- Top and bake. Spoon mash in small mounds over the filling, then join them gently with the back of a spoon. Draw a fork across the surface to make ridges. Bake for 20–25 minutes until the edges bubble and the ridges colour. Check that the centre is thoroughly hot, reaching 74°C/165°F. Rest for 10 minutes before scooping portions.
Cooking notes and substitutions
Why mash sinks into the filling
Very hot, runny gravy cannot support the topping. Reduce the filling first and let it stand briefly. Distributing small spoonfuls of mash is easier than dropping one heavy mound in the middle.
Making it dairy-free
Replace butter with a suitable plant-based spread and use an unsweetened plant drink in the mash. Check the stock and spread labels. If using home-cooked lentils, measure about 480 g after cooking and draining; red lentils break down too much for the same texture.
Storage
Refrigerate in shallow covered portions within 2 hours, or 1 hour above 32°C/90°F. Keep for 3–4 days. Freeze portions for up to 2 months for best quality; thaw overnight in the refrigerator. Reheat until the centre reaches 74°C/165°F, covering if the potato top browns too quickly.
Allergens and food safety
Contains milk, wheat and soy as written. Vegetable stock may contain celery; check its label. Keep refrigerated food at 4°C/40°F or below. Use clean utensils when checking cooked food.
