Moroccan-style chicken pasticcio with golden fries, homemade béchamel and melted cheese. Includes layering advice and a creamy, oven-baked finish.

This pasticcio is a Moroccan snack-bar-inspired gratin built from fries, chicken and béchamel under melted cheese. It uses potatoes rather than the pasta found in some other dishes with a similar name. Baking the fries separately first gives them colour and keeps excess moisture out of the gratin. The finished dish is creamy and scoopable, with a lightly browned cheese crust.

Makes: 4 generous servings. Estimated timing: About 20 minutes preparation and 45 minutes cooking with the chicken and sauce made while the fries bake. Timing depends on the fries and oven.

Equipment

Baking tray, shallow ovenproof dish, large skillet, saucepan, whisk and food thermometer.

Ingredients

  • 700 g frozen oven fries
  • 600 g boneless skinless chicken breast, cut into 2 cm pieces
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon fine salt, divided
  • 1/4 teaspoon black pepper
  • 30 g butter
  • 30 g plain flour
  • 450 ml milk
  • Pinch of ground nutmeg, optional
  • 150 g grated mozzarella or Emmental
  • 1 tablespoon chopped parsley, optional

Instructions

  1. Bake the fries. Cook the fries on a large tray at the temperature and time stated on the package. Spread them out and turn as directed. They should be golden before assembling the gratin, because the sauce will soften them. Meanwhile lightly grease an approximately 25 x 20 cm baking dish.
  2. Cook the chicken filling. Heat olive oil in a large skillet over medium heat. Soften onion for 5–6 minutes, then raise the heat slightly and add chicken, paprika, cumin, pepper and 1/4 teaspoon salt. Cook for roughly 8–10 minutes, turning, until the chicken reaches 74°C/165°F. Let excess pan liquid evaporate without scorching the meat.
  3. Whisk the béchamel. Melt butter in a saucepan, add flour and stir for 1 minute over medium-low heat. Add milk a little at a time, whisking smooth after each addition. Simmer gently for 4–6 minutes, stirring across the bottom, until thick enough to coat a spoon. Season with the remaining salt to taste and optional nutmeg.
  4. Layer while components are hot. Set the oven to 200°C/180°C fan/390°F after the fries are cooked. Spoon a thin layer of béchamel into the dish, add the fries, distribute the cooked chicken and onion, then spoon over the remaining béchamel. Scatter cheese evenly over the surface. Avoid packing down the layers.
  5. Bake the gratin. Bake for about 15–20 minutes until the sauce bubbles at the edges and the top is golden. Check that the centre is hot throughout; if assembled from chilled components, allow longer and heat the centre to 74°C/165°F. Use the upper shelf briefly for more colour only while watching closely.
  6. Rest briefly and serve. Leave for 5 minutes so the sauce settles, then spoon into shallow bowls. Add parsley if using and serve with a crisp green salad. Expect soft, saucy fries beneath the topping rather than the crunch of freshly fried potatoes.

Tips and troubleshooting

If the béchamel is lumpy, take it off the heat and whisk firmly, or pass it through a sieve before layering. If too thick, add milk a tablespoon at a time. A deep, small dish takes longer to heat in the centre; use the suggested shallow dish for a more even bake.

Substitutions

Cooked mushrooms can replace part of the chicken, but sauté them separately until their liquid evaporates. Emmental gives a nuttier flavour than mozzarella. This recipe is deliberately a fries-based version, so swapping to pasta changes the cooking and sauce needs.

Allergen notes

Contains milk and wheat. Check frozen-fries labels for coatings, wheat and cross-contact. Use cheese suitable for your dietary requirements.

Storage and reheating

Refrigerate cooked leftovers in shallow covered containers within 2 hours, or within 1 hour above 32°C/90°F. Keep the refrigerator at 4°C/40°F or colder and use cooked leftovers within 3–4 days. Reheat cooked fillings thoroughly to 74°C/165°F. Store salad and cold sauces separately; reheat only the portion needed. Discard food left out beyond these limits. Fries soften after storage; the gratin or wrap will not regain its original texture. For best results, store components separately before assembly.
