Make Moroccan-style pressed chicken tacos with fries and homemade cheese sauce. Includes folding instructions and tips for a crisp, tidy wrap.

This pressed taco is a large flour wrap filled with spiced chicken, fries and cheese sauce, then folded into a rectangular parcel and browned in a pan. It is a different style of meal from a small Mexican corn-tortilla taco. This home version uses oven fries and a modest quantity of sauce, so the filling stays inside the wrap rather than spilling over the griddle.

Makes: 4 large wraps. Estimated timing: About 25 minutes preparation and 35 minutes cooking with several stages overlapping. Allow longer if your fries or smaller skillet require extra batches.

Equipment

Large baking tray, skillet, saucepan, whisk, spatula and food thermometer.

Ingredients

  • 600 g oven fries, frozen
  • 500 g boneless skinless chicken thighs, cut into 2 cm pieces
  • 1 tablespoon neutral oil, plus 2 teaspoons for the wraps
  • 1 teaspoon sweet paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 15 g butter
  • 15 g plain flour
  • 250 ml milk
  • 100 g grated mild cheddar or other melting cheese
  • 4 large flour tortillas, about 30 cm wide
  • 1 tablespoon harissa or mild chilli sauce, optional

Instructions

  1. Cook the fries first. Heat the oven and cook fries according to their package directions, spread in one layer on a large tray. Turn as directed and cook until golden. Do not salt automatically because many frozen fries are already seasoned. Keep them hot while finishing the other components.
  2. Brown the chicken. Toss chicken with paprika, cumin, garlic powder, salt and pepper. Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook chicken in an even layer, in batches if necessary, for roughly 8–12 minutes, turning until browned and 74°C/165°F in the thickest pieces. Transfer to a clean bowl; discard any excess watery pan liquid.
  3. Make a small cheese sauce. Melt butter in a saucepan over medium-low heat. Stir in flour and cook for 1 minute. Gradually whisk in milk until smooth. Simmer gently for 3–5 minutes, stirring, until it coats a spoon. Remove from the heat and stir in cheese until melted. Let it cool slightly so it is thick rather than runny.
  4. Arrange the filling. Warm each tortilla for a few seconds until flexible. Spread optional harissa in the centre. Divide chicken and fries into four portions and stack one portion in a compact rectangle on each wrap, leaving broad clear edges. Spoon about 2 tablespoons cheese sauce onto each; reserve any extra for serving.
  5. Fold into parcels. Fold the left and right edges over the filling, then fold the bottom and top over to enclose it. Turn seam-side down. If the tortilla cracks or cannot meet in the middle, remove some filling rather than pulling harder. Tortilla sizes vary, so extra filling can be served on the side.
  6. Press gently and serve. Wipe the skillet and heat over medium. Brush the wraps with the remaining oil and cook seam-side down for about 2–3 minutes. Turn and brown for another 2–3 minutes, pressing gently with a spatula. Work in batches and serve hot, cut across the middle to reveal the filling.

Tips and troubleshooting

Watery chicken or thin sauce makes the folds soften and burst. Let wet components drain and avoid overfilling. Use medium heat for the final pressing: a very hot pan burns the tortilla before the centre warms. A heavy spatula is enough; do not place an unstable stack of pans on top.

Substitutions

Use cooked spiced beef mince instead of chicken, cooking ground beef to 71°C/160°F before filling. Choose mild sauce for less heat. Homemade fries work too, but they should be fully cooked and surface-dry before wrapping.

Allergen notes

Contains wheat and milk. Tortillas, fries, cheese and harissa may have additional allergens or cross-contact warnings; check each package.

Storage and reheating

Refrigerate cooked leftovers in shallow covered containers within 2 hours, or within 1 hour above 32°C/90°F. Keep the refrigerator at 4°C/40°F or colder and use cooked leftovers within 3–4 days. Reheat cooked fillings thoroughly to 74°C/165°F. Store salad and cold sauces separately; reheat only the portion needed. Discard food left out beyond these limits. Fries soften after storage; the gratin or wrap will not regain its original texture. For best results, store components separately before assembly.
